Why flat jaws don't work on round stock
Standard flat vise jaws touch round stock at a single point on each side. That's a tiny contact patch carrying all the clamping force, which either marks the part, lets it slip under cutting torque, or both. A profiled soft jaw spreads that same clamping force along a much longer line of contact, which is gentler on the surface and far more resistant to the part spinning in the vise when a drill or tap grabs.
Cutting the profile
Rough machine the jaw blank to fit your vise's jaw pocket and dowel or bolt pattern first, same as any soft jaw. For the round-stock profile, a V-groove cut at a standard angle, 60 or 90 degrees depending on your stock diameter range, is more versatile than a single fixed-radius groove, because a V accommodates a range of diameters with the same jaw. The stock simply sits at a different depth in the V depending on size.
If you're holding one specific diameter repeatedly and want maximum contact area, machine a matching semi-circular groove sized a few thousandths under the nominal stock diameter so the vise's clamping travel takes up the difference and the jaws bite instead of bottoming out with slop.
Cut the groove in both jaws at the same time if your setup allows clamping them together for the operation. This keeps them symmetric and puts the part on-center when the vise closes, which matters more for round stock than flat stock, since off-center clamping on a round part translates directly into runout.
Skip this step and you're chasing runout you built in yourself.
Depth and length considerations
Don't cut the groove full jaw height if you can avoid it. Leaving a flat step above or below the V lets the jaw also grip square or rectangular stock without switching jaws.
Keep the groove length matched to the stock you're actually running. A groove much longer than the part risks contact only at the ends if the part isn't perfectly straight, so for short round blanks, a shorter, closer-fitting groove gives more reliable contact than one sized for your longest expected stock.

Where a V-groove still isn't enough
Grip alone stops a part from slipping axially and resists some rotation, but it doesn't reliably prevent a part from spinning under high-torque operations like tapping or aggressive drilling in tougher alloys. For those, add a stop, a shoulder machined into the jaw or an end stop on the vise, so the part has a hard mechanical reference against rotation rather than relying on jaw friction alone.
The practical takeaway
A V-groove soft jaw is the general-purpose answer for round stock in a mill vise: cheap to make, works across a range of diameters, and a big step up from flat jaws on grip and part marking. Reserve a dedicated matching-radius groove for high-volume repeat work on one exact diameter, where the extra grip is worth giving up the flexibility.
